Raspberry Chocolate Chip Muffins

My new favorite boxed muffins with an added twist, sure to please any banana bread fiend.
Ingredients
  • 1 box Simple Mills banana almond flour muffin mix
  • 2 organic eggs
  • 2 tbsp coconut oil
  • 1 cup water
  • ⅓ cup fresh raspberries
  • ¼-1/3 cup fair-trade 70% cacao chocolate chips
  • 1 tbsp of cashew (or any nut) butter
Instructions
  1. Follow ingredients on the back of the box mixing the eggs, coconut oil and water followed by the dry mix in a large bowl.
  2. Add in your raspberries and chocolate chips to your liking.
  3. Spoon into 12 greased muffin tins or muffin liners.
  4. Cook for 30-35 minutes at 350ยบ.
  5. Cool for at least a half hour. Best served when cold out of the fridge!
