A tropical delight that will fulfill your burger dreams!
Ingredients
1 dozen roasted small yellow potatoes
2 tbsp olive oil
1 half pound turkey burger
2 small romaine lettuce leaves
1 sprouted grain bun
¼ cup Hope Foods thai coconut curry hummus
1-2 pineapple slices or chunks (grilled, preferably)
Salt and pepper for seasoning
Instructions
Begin by preheating your oven to 400º to roast your potatoes. Once heated, slice your small potatoes into halves, drizzle in 1 tbsp olive oil, salt and pepper and cook on a baking sheet for 30 minutes.
Once potatoes are done, turn oven down to 350º to heat up your bun.
While oven is preheating, put a tablespoon of olive oil in a sauté pan and set to medium-high heat.
Place your turkey burger on the sauté pan once hot, start by cooking on each side for 4-5 minutes.
While burger is cooking, place your bun on a baking sheet for 5 minutes to toast.
Place a dollop of hummus on each side of the bun.
Put your lettuce on one half, the pineapple on the other.
Once the burger is done, cut in half so you have a 4oz. portion on your bun and save the other half for leftovers.
Enjoy with your roasted potatoes and a side of ketchup or mustard, if you wish! :)
