Thai Mango Chicken Tacos

We all could use a little taco love now and again with these chicken and mango tacos!
Ingredients
  • 2 corn tortillas (I prefer Trader Joe's brand)
  • ½ cup Better Bean Cuban Black Beans
  • 8 jicama pieces
  • ½ cup frozen mango, thawed
  • ½ cup shredded organic chicken
  • ¾ cup mixed greens
  • ¼ cup Yai's Thai Medium Salsa
Instructions
  1. Begin by heating your black beans in a slightly greased pan on low heat for 2-3 minutes. Set aside.
  2. Next, thaw your mango. I prefer microwaving it in a small dish for about 1-2 minutes.
  3. Wrap your tortillas in a damp paper towel and microwave for 1 minute. You can also heat them up on a pan for 30 seconds a side on low heat.
  4. Make your tacos by adding toppings. First add mixed greens, followed by your beans, chicken, jicama and mango. Divide all portions evenly between the two tortillas.
  5. Top generously with salsa!
  6. Eat, devour, enjoy and be merry :)
