Paleo Matcha Chocolate Chip Cookies

A dairy-free, gluten-free and paleo cookie packed with antioxidants from matcha green tea and protein from collagen peptides - the perfect holiday bite!
Ingredients
  • 2 pasture-raised eggs
  • 1 tsp vanilla extract
  • ¼ cup ghee or grass-fed butter (melted and cooled)
  • 3-4 tbsp dairy-free milk (I used almond)
  • 1¼ cup paleo baking flour blend
  • 1 scoop Vital Proteins Matcha Collagen
  • 1 scoop Vital Proteins Collagen Peptides (unflavored)
  • ¼ cup coconut sugar
  • ½ cup 70% dark chocolate chips
Instructions
  1. Preheat oven to 350ยบ.
  2. Combine eggs, vanilla extract, ghee and dairy-free milk. Blend until well incorporated.
  3. Add dry ingredients into the wet including the paleo baking flour, collagen, coconut sugar and mix well.
  4. Add in chocolate chips. Mix into one large ball of dough.
  5. Roll tablespoon-sized balls out of the dough and place onto a greased baking sheet or parchment paper. You should have between 8 to 10 small cookies. Pat down gently.
  6. Bake for 15-18 minutes depending on your oven temperature. You want them lightly golden.
  7. Let cool for 10 minutes before eating.
