Beets and Beans

A simple veggie dish to throw together with beans for some protein!
Ingredients
  • 2 beets
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Sprinkle pink himalayan sea salt
  • 1 cup kale
  • 1 cup spinach
  • ½ cup canned cannelli beans
Instructions
  1. Cook your beets at 400º for 1 hour to 1 hour 15 minutes. Each one wrapped in tin foil.
  2. Let cool 5-10 minutes before cutting skins off.
  3. Sauté your kale and spinach with olive oil and garlic powder. Add more greens to your liking and the oil ratio.
  4. Heat up ½ cup cannelli beans (you could also sauté them)
  5. Dice your beets and pair them with your beans and greens in a small bowl.
