The other day at work one of my co-workers asked me how my blog was doing. Quite honestly, it’s been put on the back burner while I spend most of my week working 8 hour shifts at Whole Foods and then crashing in my bed after a long day. The fact I haven’t even posted here since the beginning of the summer makes my heart drop to my toes but knowing it’s always possible to give you guys content whenever gives me some kind of hope that this thing is still kicking!
When I told my co-worker about these matcha coconut cake balls this past Sunday, he told me I should go home right that night and write this post. Did I? No. Because all I wanted to do was sleep. The last thing I was focused on were these cake balls. That’s the honest truth these past few weeks with my blog. It’s my number one passion and yet I still find myself putting it to the side because of my other part-time jobs.
But these cake balls are perfect. And dreamy. And everything vanilla-y, cake-y, dough-y and delicious you could want in a bite-sized dessert. That’s why I am finally writing this post and delivering these goodies to ya! Because you need them in your life to struggle through this hot July heat.
I’d like to thank my co-worker for pushing me continuously this week to get my blogging brain back on track.

These balls could not be any easier to make. For real guys. They’re made with Simple Mills Vanilla Cake Mix because yano, I gotta support my favorite small local Chicago business and Califia Farms brand new Matcha Almondmilk drink.
In the beginning of the summer when I wasn’t drinking much coffee, matcha became my go-to coffee shop drink of choice and because matcha is chopped full of antioxidants, it’s wonderful to add to smoothies, lattes, oatmeal and especially desserts like these cake balls.
Not to mention, it adds a nice green tint to your food without having to use artificial food dyes! Bingooo!


These are easy to make, even easier to eat and require no eggs and dairy. Magic in yo’ mouth.
I pop them in my freezer and whenever I’m craving a sweet fix, one does the trick. Trust me on this one guys.
- 1 box of Simple Mills Vanilla Cake Mix
- 1 tbsp spirulina powder
- ½ cup unsweetened almond milk (or ½ Califia Farms Matcha Latte)
- 1 tbsp ceremonial grade matcha powder, organic
- 3-4 tbsp melted organic, unrefined coconut oil
- 1 tsp vanilla extract
- ¼ cup coconut shavings, unsweetened
- Mix cake mix, spirulina powder, almond milk, matcha powder, coconut oil and vanilla together in a large ball of dough.
- Place into freezer for 30 minutes to set.
- Take out of the freezer and scoop into 1 tablespoon sized balls.
- Place coconut shavings into a shallow dish. Roll each ball into the coconut, lightly coating each one.
- Place onto a baking sheet or into a glass tupperware container and pop back into the freezer for at least 2-3 hours until very firm.
- Enjoy!

Now I can proudly report back to my co-worker that these matcha cake balls are up and I pulled through. I can also say I might go run to my freezer this instant and tackle a handful of these.
The longer you freeze them, the more dense and cookie dough-like they will taste. Since there is no frosting in these bad boys, the coconut oil used solidifies when frozen and makes these extra indulgent and delicious.
