Organic Strawberry and Kiwi Overnight Oats

Nothing I love more than a large mason jar filled with overnight oats. However, when you mix some chia seeds in there, let them soak overnight and add some fruit in the morning, you can’t lose. I just recently bought a huge bag of Spectrum Ground Chia Seeds for $12 at Whole Foods. I also bought a bag of flaxseeds and together it cost me almost $30. Funny I’d rather spend $30 on healthy omega-3’s than something else. But anyways, chia and flax are very important staples in a good healthy diet so it’s always worth it!

I decided this morning I’d have overnight chia oats so I mixed up my creation without any fruit or added nut butters/granolas so I could add those in the morning.

Organic Strawberry and Kiwi Overnight Oats

A good way to jump start your day with a ton of organic fresh fruit and toppings!

Serves: 1
Ingredients
  • ½ cup oats
  • ½ cup unsweetened vanilla almond milk
  • 2 tbsp chia seeds (I used ground and enjoyed it much more)
  • ¼ cup Original Purely Elizabeth granola
  • 2 kiwis
  • ½ cup diced strawberries
  • 1 dried fig
Instructions
  1. Combine your chia seeds, milk and oats in a covered bowl or mason jar. Let sit overnight (6-8 hours) for best results.
  2. In the morning, top with granola then slice kiwis and strawberries and put on top of granola layer.
  3. Add a cut up fig or date for extra chewy and sweet flavor. Enjoy!

This was one of my favorite overnight oats recipe because it was super quick and easy to grab right in the morning. Of course it took a little extra time to slice up my fruit but I didn’t mind considering I have nothing else really to do today BUT if you’re a busy bee, put some frozen fruit in the mason jar. In the morning it will be slightly thawed and blend into the milk. Super yum.

I bought my organic strawberries and kiwi at Trader Joe’s because they have great prices on organic goods. The only fruit I always buy organic are apples but I do try to buy organic berries when possible, the cost always strays me away.  I do highly recommend buying organic whenever possible but when you’re a college girl on a budget, ya do what’cha gotta do! But I was super glad this morning was all organic.

The addition of the fig on top was great. I am OBSESSED with figs. And dates. But the other week I bought a carton of dried figs at my local market where I live and I always grab one when I’m craving a chewy and sugary snack. If you slice ONE up and mix it into your oats, it really adds a pop of flavor in those extra hidden bites.

If you haven’t tried overnight oats, I recommend. But toppings really make it SO much better.
